Located at Sivory Punta Cana, Gourmand actually exceeds the potential of its name. The emphasis is on the classical French techniques perfected by Chef Denis Jaricot, a Lyon native, with a dash of Caribbean influence as well. The service matches Jaricot's exacting standards; Gourmand has an 8,000-bottle wine list, and your server will know which to recommend. Despite the classic bend, menu items are very creative; consider the dried breaded poached egg atop a confit of spinach and leeks with red pepper coulis, dill cloud and pesto droplets as an example first course, and the grilled sea bass with creamy pumpkin risotto as an entrée. Parisians would approve of the impeccable dishes here. And you'll remember it as one of the finest meals you've ever had.
